Ingredients required for preparing Haitian legumes. You should take 2 pound of beef minced and chopped in a round shape and cut it in small 2 inch cubical shape. One fourth or half a cup of vegetable oil is required for making this dish. Take an eggplant and chop it into 2 inch cubes just like the beef. Other ingredients needed to prepare this dish includes one chayote, 2 green bell peppers chopped in form of 2 inch pieces, finely chopped pieces of scallion, minced garlic cloves two in number, chopped pieces of fresh parsley. Vegetables that are used to prepare Haitian legumes include cabbage from which the outer leaves should be removed. The central part of the cabbage should be chopped in form of 2 inch pieces. Other vegetables are frozen fordhooklima type beans, string beans; carrots sliced and chopped into 2 inch pieces, chopped spinach leaves and chopped bunch water cress. In addition to this, 4-5 chicken cubes, 1half cup thick syrupy paste of tomato, is required. Spices include salt to taste, black pepper ground, garlic powder, seasoning powder and spicy vinegar that is the trademark of Haiti.
Preparation procedures of Haitian legumes. First step involves the washing of the beef and marinating it for 10 minutes after applying salt and lime juice. Then you should rinse the marinated mixture with cold water. Now make a syrupy paste of all the spices together comprising of green pepper, green onions, garlic powder, parsley and vinegar. Apply it on the beef and then again marinate it for 30 minutes. Now take the beef and pour little amount of vegetable oil, add tomato paste, seasoning powder and water over the beef. Then add the chopped green bell pepper over the beef when the cooking procedure is still in progress. Cook the beef till it becomes soft and keep on adding the tomato puree so that the beef does not dry up and burn. When the beef becomes soft, boil it on a large amount of water. Add the vegetables one by one and allow them to boil. Then add some oil, butter and the chicken cubes and continue to heat over steam. Add the vegetables to the beef as they become soft. Mix thoroughly and cook for 20 minutes more. Taste and add seasonings or chicken cubes.
